Healthy and Easy Meals! :D

Even though we are currently out of the trailer, we’ll be back in it next week, and that means: It’s almost time to return to the routine, and I couldn’t be more excited! 😀 So, I was thinking maybe it’d be fun to give y’all some recipes that are easy to do in and out of the trailer (and they’re on the healthier side).

So, I have a hard time stomaching dairy and a lot of gluten, so I’ve been watching some health videos and I ran into this AMAZING YouTube channel called: The Domestic Geek. This lady has NOT let me down yet. We have tried her 3 quinoa dishes, fried rice with vegetables, and her chickpea sandwich, and a few other delicious recipes. Everything has been VERY satisfactory! 🙂

She gives a brief lesson on how to use it at the end of most of her videos. Crispy Veggie Wraps

1 – 2 tortillas
vegan cream cheese
a handful of spinach
tomato, thinly sliced
a small handful of chickpeas
1 – 2 tbsp. marinara sauce (or pizza, pasta sauce).
